International Cuisine

International Vegan Cuisine with guest chef Shashi Chopra, Sunday, February 13, 10 a.m. – 1 p.m. Fairfax Station, VA. Learn the cuisine of other cultures without leaving home. Past classes have included some of the following: Chana Masala, Aloo Gobi, Basmati Rice, Saag, Chapati Bread, Moong Dal, Coriander Chutney, 7-Layer Mexican Bean Dip, Pesto Pizza, Baked Ziti, Lasagne, Baked Spring Rolls, Hunan-Style Orange Beef, Chicken & Broccoli with Black Bean Sauce, Kung Pao Chicken, Seitan Bourgiugnonne, Paella, Stuffed Cabbage, Seitan Stroganoff, Pad Thai, Vegetable Sushi, and a Valentine’s Day Dessert. 
 
Shashi will also demonstrate the use of stainless steel compartment serving trays for sampling a variety of Indian foods. They will be available for purchase in class. 

No meat, poultry, fish, eggs, dairy, or honey. $50/person; $90/two people; $45/VSDC, VRG, COK members. Demonstration classes include recipes, organic food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. Loved this class!! Mimi, you and Shashi make a great team. :) Everything was delicious. I stopped by an Indian grocery store on the way home so that I could make the chana masala for my husband — he loved it! (Next time I will plan in advance and used dried chickpeas instead of canned, but I just had to share this food with him!) Can’t wait to make him the other dishes. :)

  2. My boyfriend Adam and I greatly enjoyed this class!! Both Mimi and Shashi are fantastic cooks and a joy to watch and learn from. We loved everything from the snacks to the entrees and as Indian food is Adam’s favorite and Italian is mine we will be trying everything at home, probably in the next week. This is a great gift to anyone (it was my surprise treat to him) and we will be back for more classes. Thank you Mimi!

  3. This is my 4th class. Mimi’s classes provide a firm foundation for anyone wanting to learn more about vegan cooking techniques, products and recipes. There is so much to taste. The Shashi and Mimi combo was wonderful. So much packed into 3 hours. I plan to make EVERYthing. I look forward to the Comfort Foods class. Thank you Mimi for your generosity.

  4. I really enjoyed the International Cuisine class yesterday! I wish I had that fancy blender so I can make that incredible sorbet–for now I will put that on my wish list. I loved every item we tried, and after class had my mom buy me mango powder and dry mustard so I can experiment with a few new things. I might try using the Seitan sometime as well, as it’s seems so nutritious!

  5. The International Cuisine class was so inspiring that Beverly and I are planning a get-together this weekend and using some of the recipes from the class. Shashi’s chana masala with basmati rice was scrumptious. I also really enjoyed Mimi’s Hunan Orange “Beef” and Broccoli made with seitan, the spring rolls with the delicious dipping sauce, and the strawberry sorbet. Mimi makes it all look so simple and her energy for healthy, vegan food is infectious. Thank you for a wonderful class Mimi and I look forward to the March Comfort Food class.
