    Soyfoods 101,  Sunday, April 15, 10 a.m. – 1 p.m. Fairfax Station, VA. Dispel the myths! Learn to cook with soyfood derivatives including tofu, tempeh, miso, TVP, shoyu/tamari. Past classes have included some of the following: roasted soy nuts, organic soy milk smoothies, edamame hummus, miso tahini spread, ranch dressing, miso soup, tofu boursin cheese, tempeh salad, tempeh hash, tempeh Reuben, TVP meatloaf, marinated baked tofu, tofu chicken nuggets, breaded tofu, soy 2-way chili, Thai tofu curry, sesame tofu bowl w/ peanut dressing, fudgesicles.

    Pressing tofu will be demonstrated with the awesome TofuXpress 

    No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members. Demonstration classes include recipes, organic food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. I am so glad I took this class. Who knew tofu was so versatile, healthy, and delicious! Mimi has done it again. This class was full of interesting and helpful cooking instructions and the food was outstanding! Tasty chili, orange tempeh, “blue cheese” dressing, tofu stir fry and more. My list of mouth-watering vegan recipes is growing thanks to Mimi and her amazing talent in the kitchen. I can’t wait to try the lime parfait on my family…it was to die for! Thank you Mimi for making my vegan transition possible!

  2. Another fun and interesting class! Mimi’s knowledge is so impressive and she presents her skills in an easy to follow manner every time. I will definitely try the marinated tofu, which would be great to make for lunches at work mixed in with veggies and quinoa or brown rice. That was my first time trying tempeh and I liked it as well. I also fell in love with the key lime yogurt parfait, and the smoothies, both of which I plan on making this summer. And I have a new list of items to look for thanks to the awesome sample plate we got yesterday 🙂 The classes are incredibly well-run and the presentation is fantastic.

I just completed a year’s worth of Mimi’s veg-cooking classes (minus one class in January) and what a wealth of knowledge, resources, recipes, ideas, tools and cookbook titles I have gained from this experience! I would highly recommend Mimi’s classes to anyone new to this lifestyle or just struggling like I was to thrive in it. I had been a vegetarian for 3 years when I discovered Mimi’s classes, but was very limited in my versatillity and creativity. I’ve gained so much, it has been a GREAT experience!! Tranisitioning vegetarians & vegans, or just anyone who wants to incorporate more healthy, meatless recipes into their life – this is the class to take to set you on the right path!

  4. I loved the class. As always I learned alot of new information about cooking in general and nutrition. I did make the ceasar dressing- and the chili. They both came out great. For me the advantage of taking a cooking class with Mimi is I learn to cook so I can take the recipes and others as well and adjust them to my taste. That is something I could never do before. I didn’t have the confidence and knowledge to deviate from a recipe. I truly recommend Mimis cooking classes for anyone that is interested in healthy cooking. I look forward to taking more classes and becoming a better cook- its alot of fun.

    I really enjoyed Mimi’s Soyfoods 101 class. I learned easy substitutions for typically non-vegan products. I prepared the Tofu in Black Bean Sauce and everybody in my family loved it. I will be going to some more of Mimi’s classes. I am really interested in the International foods class and the Salads Class.

    I liked Mimi’s class very much (soyfoods101); she not only teaches you how to prepare her delicious recipes, but she also gives you some great advice about what is better to use for getting some great health benefits, and also where to get a great variety of vegan products.
    I am sure I will be going to a few of her future classes.
