Mimi Clark has been a pioneer in plant-based cooking having taught private, group, and corporate vegan cooking classes in VA, MD, and DC for the past 22 years. Mimi’s daughter, currently in graduate school, has been vegan since birth.
Mimi has been a chef for Eden Foods at the Fancy Food shows in DC, and at the Natural Products Expo East in Baltimore. She has formulated vegan recipes for many manufacturers including Earth Balance, Made Just Right, Sweet & Sara Marshmallows, WholeSoy Yogurt, Galaxy Foods, Mary’s Gone Crackers, Wholesome Sweeteners, Yummy Plants, and Edward & Sons, to name a few.
Mimi’s Meatless Holidays class was featured on Wendy Reiger’s Going Green series on NBC4. She was a featured speaker at the DC VegFest, and at the News4 Health & Fitness Expo in Washington, D.C.
Mimi is currently a consultant for the Loving Hut vegan restaurant in Falls Church, VA where she creates their ice cream, Key Lime pies, and holiday menus. When she is not teaching cooking classes, Mimi can be found at area natural food stores sampling the latest vegan products in an effort to raise awareness about plant-based foods.
