She was featured on Wendy Reiger’s Going Green Series on NBC4 at 5, was a presenter at the DC VegFest, and at the News 4 Health & Fitness Expo on behalf of VSDC. Mimi is a vegan recipe consultant and recipe developer for natural food manufacturers. Her recipes have been featured on numerous websites including Edward & Sons, Earth Balance, Mary’s Gone Crackers, Sunergia Soyfoods, Wholesome Sweeteners, Wholesoy Co, Made Just Right, Yummy Plants, and others. Her vegan-since-birth daughter is a senior at the University of Mary Washington.
