Start your day the healthy way. Past classes have included some of the following: Eggless Benedict, Eggless Omelettes, Whole Grain Waffles & Pancakes, Quiche, Crepes, Hash Brown Casserole, Polenta Fries, Overnight Oatmeal, Homemade Granola, Sticky Buns, Muffins, Scones, Smoothies, plus a variety of organic cereals and dairy-free milk.

No meat, poultry, fish, eggs, dairy, or honey. $50/person; $90/two people; $45/VSDC, VRG, COK members. Demonstration classes include recipes, organic food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. Mimi is full of information & new ideas and her unlimited energy & excitement about cooking are inspiring. Not only do we learn about cooking food, we learn about the properties of ingredients and how they work together. Her very knowledgeable assistant, Ebony, is a nice complement to the class. Great recipes!

  2. I have attended five of Mimi’s classes this year, and Breakfast & Brunch was one of my favorites! The classes are always well-planned and executed flawlessly. They provide a great opportunity to sample foods I otherwise may not have purchased and tried on my own. Not only does Mimi simplify seemingly complex recipes, but she also provides a wealth of information with regard to nutrition and where to locate those hard-to-find ingredients. Mimi does a fantastic job of taking your family favorites –familiar and comforting foods– and veganizing them with taste, texture and appearance. I am planning my first vegan brunch with omnivore parents and in-laws this weekend and thanks to Mimi’s classes, I am confident I have enough delicious recipes to satisfy the pickiest of them. I feel extremely fortunate to have access to such a phenomenal vegan cooking instructor in the DC area! If you have an opportunity to take one of Mimi’s classes, I would highly recommend it. Mimi does not disappoint!!

  3. The hash brown casserole was my favorite and it’s nice to know how to make pancakes that are healthier than the average. I usually avoid eggs but I am willing to experiment now that I know some great recipes for simulating eggs in different varieties – breakfast patties, scrambled, omelette!

    Watching Mimi cook is always a joy, and I particularly enjoyed her breakfast & brunch class, as she made “veganizing” your classic breakfast dishes seem effortless, as well as introduced some new and exciting dishes such as her polenta fries, which are a healthy alternative to home fries (e.g. fried potatoes). I love that Mimi is so health conscious and always finds ways to cut sugar and fat from her dishes without compromising flavor. As a former egg-lover, I was most excited to learn to make an eggless omelet, and Mimi also whipped up an eggless benedict with vegan hollandaise sauce. What’s best is that Mimi can spout off the health benefits of most ingredients that she uses, and she always arms her students with a glossary, a very detailed shopping list (complete with contact information of the manufacturers of her ingredients and stores where items can be bought), and coupons so that students are well-equipped to re-create her dishes at home!
