Meatless Holidays, Sunday, November 6, 10 a.m. – 1 p.m. Fairfax Station, VA. Start a new Thanksgiving tradition with all the trimmings! Past menus have included Buttercup Bisque, Pecan-Whipped Yams w/Sweet & Sara Marshmallows, Green Bean Casserole, Cranberry Sauce, Seitan-Stuffed Loaf w/ Sage Dressing, Fat-free Shiitake Mushroom Gravy, Dairy-free PumpkinCheesecake, Hot Mulled Cider, Sweet & Tart Cranberry Sorbet.

No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members. Demonstration classes include recipes, organic food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. LOVED today’s class! (As usual, lots of creative, delicious ideas! Always gets me motivated for cooking!) Hit Wegman’s on the way home and stocked up for cooking! I’ll experiment on my family with probably all of the recipes, before Thanksgiving and decide which ones to bring over to Mom’s.

    I’ve had a couple of acorn squashes sitting on the counter for a while, trying to figure out what to do with them – they now have a purpose! I LOVED THE BUTTERCUP SQUASH SOUP SOOO MUCH!!! I’m going to try and substitute the acorn squash for the buttercup and hopefully it will be just as delicious – I’ll let you know soon, making it for dinner tonight!

    Thanks again Mimi, for a fun class and a plethora of new ideas to play around with! 🙂 Always enjoy meeting the interesting variety of people that come to your classes, and today was by far, the most interesting! 😀 Looking forward to December!!

  2. I enjoyed my first class with Mimi so very much and will be taking another class with her in January. Mimi welcomes all students and covers many recipes, which the students then get to try (delicious!). Please, if you are considering taking one of Mimi’s classes, do sign up and enjoy!
