Soups & Stews, Sunday, January 8, 2012, 10 a.m. – 1 p.m. Fairfax Station, VA. Start the new year with hearty, winter-warming one pot meals. Learn to make vegan soup stock and from there, build heart-healthy one-pot meals such as Minestrone Soup, Lentil Barley Soup, Creamy White Bean Soup with Wasabi Pesto, Jacki’s Chili, Potato Leek Soup, Herbed White Bean Cassoulet, North African Stew, Paella, Black Bean Fejoda, Beef-style Stew, Vegetable Melange, Goulash, Seitan Bourgiugnonne, Hoppin’ John, Moong Dal, Pasta Fagioli, and cornbread.

No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members. Demonstration classes include recipes, organic food samples, manufacturers’ samples and coupons. Gift certificates available.

    I really enjoyed your cooking class today. I am very new to vegan and your class was really helpful. It can be overwhelming learning new foods and products that aren’t in the mainstream diets. I appreciated the way you went over basic cooking without meat and diary. See you at your next class in February!!! Debbie Borden

  2. I just took this class with Mimi, my fourth, and once again I was REALLY impressed with her recipes and the fun, easy to follow way she presented them. I can’t wait to make the chili and corn bread for my family who all think being vegan means I must be compromising on taste. They will never know they aren’t eating ground beef chili and buttermilk cornbread. Mimi does a wonderful job of finding delicious substitutes that taste better than the real thing! Thanks Mimi for another great class! I will see you in March!

  3. Loved the class today, fun and learned so much, ….very delicious and creative dishes, wide variety of taste, texture, and nutrition, …great ideas for easing or jumping into vegan foods. I went from vegan interested to vegan wannabe. Looking forward to next class!

  4. I just attended Mimi’s soups and stews class and immediately went home to make one of her recipes. Cooking and learning about the vegan diet can be intimidating, but Mimi approaches it with a down-to-earth, non-judgmental attitude. I enjoyed the class and look forward to more.

  5. Mimi’s Stews and Soups class was both entertaining and educational. Each recipe was easy to make and could be tailored to suit your individual taste. For those of us who had a Vitamix, Mimi was thoughtful enough to demonstrate the use of the Vitamix when preparing a few of the recipes. I came away with some great tips for substituting different ingredients to create flavor without adding fat. Can’t wait for the next class!
