Past classes have included some of the following: Eggless Benedict, Omelet (pictured above, featured in The Vegg cookbook), French Toast, Whole Grain Waffles & Pancakes, Quiche, Crepes, Hash Brown Casserole, Polenta Fries, Overnight Oatmeal, Homemade Granola, Sticky Buns, Muffins, Scones, Smoothies, plus a variety of organic cereals and dairy-free milks.

No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members. Demonstration classes include recipes, organic, non-gmo food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. Mimi’s Fully Loaded Granola is my go-to treat. Hands down better than any store bought.

    You would have never known that the veggie omelette and quiche were made with egg substitutes. Mimi goes through each step of her recipes and explains the process and products so thoroughly that you feel confident you can have the same results, too.

  2. Mimi outdid herself with the quiche and the omelette. Of course, I love her granola. What I really love about Mimi’s classes is they are real. She is a real person, showing it like it is in the kitchen. Nobody is perfect when we are cooking, especially trying to make vegan a recipe that was very UNVEGAN, like an omelette.

    Folks, if you haven’t been, the Beans and Grains is a wonderful class.

  3. This was my first class with Mimi and definitely won’t be my last! I loved all of the recipes and can’t wait to try them at home. Top of my list is blueberry muffins, YUM! I also loved sampling different products available in stores 🙂

  4. I always look for new and healthy ways to cook meals for my family. Especially, breakfast is one of the important meals of the day. I was so excited participating Mimi’s cooking class about “Breakfast & Brunch”. Mimi is an amazing teacher and her class was very interesting. She taught us many different types of breakfast recipes. They were all delicious, fast and easy to cook. I love her blueberry muffins. They are very soft and moist with a right amount of sweetness. The quiche and the veggie omelet were so yummy with a soft, smooth texture and flavorful taste. Besides, there was so much useful information to learn in this class.

  5. This was my second class with Mimi. This time, I took my 14 (almost 15) YO daughter to the class hoping that she might be inspired by Mimi’s creativity and knowledge. Afterwards, she said that she planned to put together a vegan brunch, using the recipes from the class, for her (mostly non-veg) friends. What more inspiration could I ask for? Mimi’s classes are a great combination of excellent practical advice, wonderful food and enjoyable personal anecdotes. Thanks, Mimi.
