Meatless Makeovers, Sunday, October 19, 10 a.m. – 1 p.m. Fairfax Station, VA. Transform family favorite dishes into healthier meals. Past classes have included some of the following: General Tso’s Chicken (pictured), Beef Stroganoff, Goulash, Pepper Steak, Sweet & Sour Meatballs, Chicken a la King, Chicken Divan, Chicken Parmesan, Chicken Scaloppini, Baked Ziti with Tofu Ricotta Cheese, Stuffed Shells, Shepherd’s Pie, Paella, Meat Loaf. Participants are encouraged to bring a favorite family recipe to veganize in class.

No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members. Demonstration classes include recipes, organic, non-gmo food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. This is the second of Mimi’s classes that we have attended. We were so excited about the new meatless options we learned about in class, we stopped at the store on the way home to buy the ingredients. We had no idea how easy and delicious vegan cooking can be!

  2. We thoroughly enjoyed Mimi’s Meatless Makeovers today and have our shopping list ready to go. When sampling all of the various meals, had we not known, we would have sworn we were eating meat. Mimi is entertaining, exceedingly well-informed on all aspects of vegan cooking, and we would highly recommend her classes (and will). We look forward to attending additional classes in the near future.

  3. I quite enjoyed myself today at Mimi’s Meatless Makeovers class! I can honestly say that I do not have one favorite out of all of the recipes, as they were all EXCELLENT! I cannot wait to recreate them at home, and the manner in which they were taught was not only easy to follow, but the class was also given alternate options to enhance each recipe. As someone who had previously taken a class years prior from Mimi, I can easily say that I look forward to many more classes in the future. What an amazing person!!!

  4. I am so impressed with everything about Mimi’s classes! They are in a warm and friendly environment. Our theme for the class was Meatless Make-Overs, which included Seitan Stroganoff, Shepherd’s Pie, Sweet & Sour Meatballs, Chick’n Parmesan, and Fully Loaded Nachos. We also got to sample her Key Lime Mousse, Oil-Free Herbed White Bean Pate, and many samples from manufacturers. Mimi explained everything really well. Her recipes were easy to follow and the food was delicious!

    I enjoyed last Sunday’s Meatless Make-Over’s class very much. I learned how to convert a chicken paprikash recipe with vegan substitutes such as Tofutti or Follow-Your-Heart sour cream and Westsoy marinated chicken seitan.

    The long list of meat and and dairy substitutions that you handed out was an eye-opener for me. I had no idea that there were that many products on the market. There is really much more choice out there than I ever imagined. Thanks for taking the time to develop this fine handout. Gracias!

  6. I am glad that I took the Meatless Makeovers class. It was a wonderful learning experience in cooking different vegan recipes which were all delicious. I really love the Key Lime Mousse! It has a rich and creamy texture. I rarely eat dessert, however the Key Lime Mousse has become my everyday dessert because of its amazing taste. It’s the best mousse I have ever had. Mimi makes it for the Loving Hut in Falls Church, VA, but it sells out fast!

  7. This class was great and has been so helpful. My husband loved the Shepard’s Pie and is willing to try other meatless meals. As always Mimi is so organized and clear with her explanations. Each class helps me to feel more confident in my ability to continue cooking meatless meals that taste amazing.
