Past classes have included some of the following: Sweet & Sour Chicken (pictured), General Tso’s Chicken, Beef Stroganoff, Goulash, Pepper Steak, Chicken a la King, Chicken Divan, Chicken Parmesan, Chicken Scaloppini, Baked Ziti with Tofu Ricotta Cheese, Stuffed Shells, Shepherd’s Pie, Paella, Meat Loaf. Participants are encouraged to bring a favorite family recipe to veganize in class.

No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members, senior citizens, students w/ ID. Demonstration classes include recipes, organic, non-gmo food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. As someone just entering the vegan world I found Mimi’s meatless makeover class very informative, not to mention delicious! She takes something that on the surface seems very complicated and makes it easy to understand, how to take tasty vegan products and adjust recipes you’ve been cooking all your life to healthier alternatives. And of course what really makes a great class is all those little tips that only someone with lots of experience knows and is willing to share. Especially anxious to try the Seitan(Beef) Stroganoff at home and looking forward to the Soups and Stews class in January.

  2. Whether you are trying to make more eco-conscious, healthier decisions in your life, or new to veganism/vegetarianism, this class was an essential. Not only were there tasty recipes that were veganized. Mimi provided a list of vegan alternatives, which included manufactures’ list, that make the transition to making a delicious vegan meal a seamless effort.

    My fiance and I attended Mimi’s Meatless Makeover class for the first time. We were very impressed with how easy and delicious Mimi’s recipes are and how anyone can’t help but love them! We appreciated the time she took after the class to send us information about our questions on Soy and a vegan wedding cake vendor in our area. Mimi is a wealth of knowledge and we look forward to attending her classes in the future.

  4. When you are preparing your grocery list for the recipes as Mimi demonstrates them, you know you are hooked! I enjoyed everything, (seriously), and look forward to next months class!

  5. In this class, we learned how to make Seitan Stroganoff, Shepherd’s Pie, Sweet & Sour Meatballs, and Chick’n Parmesan. They were all delicious, but my favorite was the Seitan Stroganoff. The rich and creamy texture of soy sour cream blending with multiple types of herbs made it very flavorful.
