Put a healthy slant on foods that satisfy and de-stress. Kid-friendly recipes will include some of the following: Meatloaf/gravy/yam fries (pictured above), Fully Loaded Nachos, Shepherd’s Pie, Goulash, Corn Dogs, Hush Puppies, Mac & Cheese, Roasted Vegetable Pizza, Chicken-free Noodle Soup w/ Beyond Meat, Winter Greens w/ Cashew Cream, Grilled Cheese Sandwiches, Nutty Noodles, Baked Ziti, Onion Rings, Homemade Ice Cream , Chocolate Chip Cookies, Chocolate Pudding.

No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members, students and seniors with ID. Demonstration classes include recipes, organic food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. The Comfort Food class was a great way to learn more about getting some of the comfort flavors and textures that I grew up with in a vegan format. We had some great dishes throughout the course. The Sliders and the Noodle Soup are recipes that I can’t wait to make for my family. Looking forward to future classes!

  2. My young son and I recently took the comfort foods class. We learned so much, in a few short hours! Every recipe was easy to follow, very tasty and easy to reproduce at home. We were so inspired by Mimi’s enthusiasm, recommendations, and encouragement. I am happy to say we are making good food choices, cooking meals at home, and eating more veggies!

  3. Great class! Great way to show plant-based alternatives to meat-lover classics. Mimi does an excellent job showing off her knowledge of how to simulate comfort foods that is both nutritious and satisfying.

  4. I truly try to attend every one of Mimi’s classes which are informative, fun and enlightening. I always take away something of value with every class. I especially loved the Sliders and the Noodle Soup, and will be attending the next class. I hope you’ll join me!!!
