Beans & Grains, Sunday, September 11, 10 a.m. – 1 p.m. Fairfax Station, VA. Learn to cook with ancient supergrains, and lesser-known beans. Past classes have included some of the following: Lentil Walnut Pate, Falafel, Edamame Hummus, Herbed White Bean Pate, Mujadara (lentils & rice, pictured above), White Bean & Kale Soup, Teff Polenta, Azuki Bean Patties w/Szechwan Sauce, Cumin-Scented Orange Black Beans, Creamy Millet Mash, Spelt/Kamut/Barley Combo, Buckwheat Tabouli, Quinoa & Wheatberry Salad, Black Bean Brownies, Blueberry Amaranth Cake, Fully Loaded Granola.

No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members, students with ID, senior citizens. Demonstration classes include recipes, organic, non-gmo food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. I loved everything in the Beans & Grains class, but if I had to choose a favorite, I would pick the Azuki Bean Sliders. If you are even thinking of eating less animal products, take one of Mimi’s classes. She is so knowledgeable and her recipes are so delicious you will be inspired.

  2. Going into this class, I thought I was aware of most, if not all, of the kinds of beans and grains. However, I was pleasantly surprised to discover (and try) some new kinds of each! Mimi is very knowledgeable about all aspects of vegan cooking, from the ingredients to cooking methods and even nutritional science.

  3. Mimi never fails with her enthusiastic and inviting way of sharing her knowledge in vegan cooking. My daughter and I just took our third class with Mimi, and again, extraordinary!!! Mimi has such a fun and compassionate way of sharing her knowledge and the food …. YUMMI!!! I do think the Millet Mash and Azuki Bean Sliders were my favorite but all of the food was delicious!! I thoroughly enjoy her hospitality, knowledge and cooking.

  4. This is my second class with Mimi. I was really looking forward to it because the first one was so much fun. This one was just as good! Mimi is so much fun, she has so much info to share and she is so knowledgeable about healthy eating. I loved the dishes she prepared, millet mash and meatless patties, etc. The other participants were very pleasant also. It is just a lovely way to spend a late Sunday morning! Thank you Mimi!

  5. The bean and grains class was my third class and it was amazing! I had no idea there was so much nutrition in beans and grains! Better yet, I had no idea there were so many tasty ways to make meals out of them too! Now I can make somewhat healthy brownies with beans and you would never know! I am so glad I attended this class and can’t wait for the Meatless Makeovers class in October!

  6. I found so much helpful information in the Beans and Grains class. The Mixed Grain Combo was a great source of nutrition. The Millet Mash was creamy and soft, with a nice texture. The Azuki Bean Sliders were very flavorful. I will definitely come back for other classes.

  7. Amazing introductory primer to veganism for those who are looking to add more unprocessed vegan food to their diet. It has helped me expand my variety of beans and grains to the more ancient and lesser known varieties, to utilizing the beans we all know and love in creative ways. How many people can create delicious vegan black bean brownies? This class is a must!
