Soups & Stews, Sunday, January 8, 10 a.m. – 1 p.m. Fairfax Station, VA. Start the new year with hearty, winter-warming one pot meals. Learn to make vegan soup stock and from there, build heart-healthy meals including some of  the following: Roasted Squash Soup with Cashew Cream (pictured), Chicken Noodle Soup, Minestrone Soup, Lentil Barley Soup, Creamy White Bean Soup with Wasabi Pesto, Black Bean Chili, Potato Leek Soup, Herbed White Bean Cassoulet, North African Stew, Paella, Black Bean Fejoda, Beef-style Stew, Vegetable Melange, Goulash, Seitan Bourgiugnonne, Hoppin’ John, Moong Dal, Pasta Fagioli, cornbread.

No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members, students and seniors with ID. Demonstration classes include recipes, organic food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. I attended the January 8, 2017 class. All of the dishes were absolutely wonderful. I really enjoy the knowledge of the information on nutrition that Mimi imparts. I really love that you can ask questions, and taste the dishes that she prepares and if you want to modify the recipe it’s very much encouraged. I am “transitioning” to veganism, and I have to say these classes have been so valuable to my knowledge and growth. Thanks Mimi… 🙂

  2. I loved Mimi’s soups and stews class 1/8/17! The chili was especially good and I think my 11 year old daughter will love it as will my husband! Mimi also imparted lots of health wisdom while cooking!

  3. Mimi continues to amaze me – I found the Soups & Stews class to be knowledgeable, entertaining and quite tasty! The Chili and Cornbread were probably my favorite. The Chili was nicely flavored – the cornbread was delicious (and I am not often a fan of cornbread). A close second would be the Lentil Barely Soup!! Mimi does such a fantastic job at sharing her knowledge while demonstrating how to make delicious home style foods!!

  4. I am not a big soup person, but Mimi’s class broadened my horizons. My favorite recipe was the chili because had the perfect heat to it. I don’t like spices, therefore chili is normally too spicy for me. However, Mimi’s allows me to eat chili without a gallon of water beside me. The other recipes were delicious too. Thanks to Mimi I now have some soup recipes that satisfy my taste buds! I can’t wait for the Comfort Foods class in February!

  5. I loved learning some wonderful vegan soups and stews recipes from Mimi! She explains everything so clearly that I had a very easy time cooking 2 of them within days of the class. Thanks Mimi!
