Past classes have included some of the following: Pot Stickers (pictured), General Tso Veggie Chicken, Falafel/Tahini, Sushi/Wasabi, Chana Masala, Aloo Gobi, Basmati Rice, Saag, Chapati Bread, Moong Dal, Coriander Chutney, Sweet & Sour Meatballs,  Pesto Pizza, Baked Ziti, Lasagne, Baked Spring Rolls, Hunan-Style Orange Beef, Chicken & Broccoli with Black Bean Sauce, Seitan Bourgiugnonne, Paella, Stuffed Cabbage, Seitan Stroganoff, Pad Thai, Pho.

No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members, students and seniors with ID. Demonstration classes include recipes, organic food samples, manufacturers’ samples and coupons. Gift certificates available.

  1. This class was awesome! Before I went vegan I used to eat a sweet potato roll, but the sweet potato was tempura in an egg batter. Therefore, I couldn’t eat it anymore once I became vegan. Thanks to Mimi’s class I can now make my own. It will take some practice, but I am determined to master the art of making sushi! I absolutely loved the Italian dish and many others. Once again Mimi leaves me in awe with her delicious recipes and endless knowledge of nutrition! Thank you Mimi!

  2. Another spectacular class by Mimi – her profound knowledge and willingness to educate is admiring. All of the recipe samples were delicious. My daughter and I went home and made the Penne Pasta with Tofu Ricotta Cheese – amazing and so easy to make!! Next will be the Falafel & Lemon Tahini Sauce then Chana Masala … Vegetable Sushi close behind (will require some patience but am determined to master)!!! Your relationship with Mimi doesn’t end once the class is completed … Mimi makes a strong effort to stay in touch and encourages you to email her with your progress, questions, comments 🙂 Mimi, I thank you for your willingness and ability to teach and your encouragement for me to continue to expand on my vegan journey!!!!

    My wife and I thoroughly enjoyed this class. We are new to the Vegan lifestyle and are looking for resources where we can learn. Mimi’s passion for this lifestyle is infectious. This won’t be the last class we take with her.
