Past classes have included some of the following: Eggless Omelet (pictured above, featured in The Vegg cookbook), Eggless Benedict, French Toast, Whole Grain Waffles & Pancakes, Quiche, Crepes, Hash Brown Casserole, Polenta Fries (inspired by candlecafe.com, NYC), Overnight Oatmeal,  Deviled “Eggs” (inspired by lagustasluscious.com NY), Homemade Granola, Sticky Buns, Muffins, Scones, Smoothies, plus a variety of organic cereals and dairy-free milks, and featuring step-by-step instructions for DIY homemade yogurt!

No meat, poultry, fish, eggs, dairy, or honey. $55/person; $100/two people; $50/VSDC, VRG, COK members, students and seniors with ID.  Demonstration classes include recipes, organic, non-gmo food samples, manufacturers’ samples and coupons. Gift certificates available.

    My daughter and I attended Mimi’s breakfast and brunch class this past Sunday and really enjoyed it. it was our first vegan cookery class which was a gift from my colleagues at work. Mimi is a fabulous cook and a wonderful teacher so we both really enjoyed the class. We picked up some great tips for a plant based diet and left encouraged to add more variety to our already vegetarian diet. I really loved the yogurt, blueberry muffins and granola which will become a staple from now on. A great bunch of people participated and the setting was perfect, very relaxed and welcoming. We loved tasting all the dishes and came home with a bag full of give-aways which was great. Mimi is very approachable and really loves what she does. I would certainly recommend this course. Thanks Mimi.

  2. I really enjoyed Mimi’s breakfast and brunch class for the second time. Mimi always has wonderful tips and is very encouraging to future or current vegans. The omelet was wonderful and I can’t wait to make the vegan yogurt!

  3. I am so lucky that Mimi rescheduled this class. I cannot wait to cook the eggless benedict and make my own yogurt from non dairy milks. Mmmm this is going to take my brunches to a whole new level. Can’t wait for the salads class! These classes are so easy to follow and all of the food is awesome. The deviled eggs – well, what can I say? They are spectacular!

  4. I highly recommend this class to anyone who would like to make not only a healthy but particularly tasty alternative to some of the most popular American breakfast classics! The cooking instructions were precise and well thought out. Mimi has a great teaching style. She explains the ingredients and recipe steps and also shares fun facts and personal stories from her plant-based journey. It’s an informative and fun approach to cooking and learning the many wonderful benefits of the plant-based lifestyle.

  5. This was an excellent class in a great setting… a home. Her teaching style and the time of the course were spot on. If you are interested in learning more about this lifestyle and cooking Breakfast and Brunch along with desserts, this is a MUST take class. Seeing the creations and then getting to taste the finished product was awesome. I know that many skeptics would have no clue what they are eating if they eat this food as it tastes GREAT. As we all know, the “eyes” are the biggest deciding tool. I CANNOT wait to make the vegan deviled eggs, not to mention the yogurt.
